Our King Scallops are carefully hand picked off the sea bed by divers. This process of fishing for scallops not only causes minimal damage to the sea bed, but gives a perfectly, in-tact, fresh scallop with the coral still attached. We do however trim off the small part where the scallop attaches to the shell known as the ‘foot’. They vary in size at different times of the year but are always superb quality.
